This is my mother-in-law's most requested recipe, in my opinion. The kids have renamed this MiMi's Corn!
2 cans whole kernel corn, drained
3 eggs, well beaten
1/2 cup butter
1 1/2 tsp baking powder
1/2 cup sugar
1 Tbsp butter, melted
1 Tbsp flour
1/2 tsp cinnamon
1/2 cup evaporated milk, undiluted
Preheat oven to 350*. In medium saucepan, heat 1/2 cup butter with 1/2 cup sugar until butter is melted. Stir in flour until well blended. Remove from heat. Gradually stir in milk. Add eggs and baking powder and mix well. Fold in well drained corn. Turn into 1 quart casserole. Bake 40 minutes or until knife inserted into center comes out almost clean. Sprinkle with cinnamon.
