One 3-oz piece (5-6 inches) multi-grain or whole wheat French baguette
1/3 cup chopped onion
3 Tbsp chopped green pepper
1 1/2 Tbsp sliced mushrooms
1/4 cup reduced fat marinara sauce
1 oz finely shredded low-fat mozzarella cheese
1 oz Italian sausage
6 slices turkey pepperoni
Preheat the oven to 400*. Cut your bread in half lengthwise. Place the halves on a nonstick baking sheet, insides facing up. Bake for 5-7 minutes, until lightly toasted.
Brown your Italian sausage. Remove from pan and set aside. Cook the peppers, onions and mushrooms in the same pan until just tender, stirring occasionally. You need to cook them slightly to release some of the liquid from them so they won't make the pizza soggy.
Top the baguette evenly with the marinara sauce, onion mixture, sausage, pepperoni and cheese. Return the pizza to the oven to bake until cheese is melted and the bread is crisp, about 5-8 minutes. Serve immediately.
You can cut into smaller pieces for an appetizer as well.
This makes 2 pieces. Each piece has ~198 calories.
