Tortellini Soup

2 lbs ground sausage, browned
4 cans Rotel, undrained
4 cans beef broth
3 cans tomato sauce
1 c water
2-3 chopped carrots
1 onion, chopped
2 Tbsp each oregano & parsley
2 tsp basil
2 minced garlic cloves
1 bay leaf
1 medium zucchini, sliced & quartered
20 oz cheese tortellini

Combine all ingredients except zucchini and tortellini. Bring to a boil. Reduce heat and simmer 2-3 hours. Add the zucchini and cheese tortellini 45 minutes before serving. Remove bay leaf.
