1 large onion, chopped
1 large green pepper, chopped
2 cups cooked chicken breasts, chopped
1 can fat free cream of chicken
1 can fat free cream of mushroom
1 can Rotel, drained
1 tsp chili powder
1/2 tsp pepper
1/4 tsp garlic powder
12 (6 inch) corn tortillas, cut into one inch strips
1 (8 oz) reduced fat shredded cheddar cheese
Preheat oven to 350*. Saute' onion and bell pepper in a large skillet with cooking spray. Stir in chicken and the next 6 ingredients; remove from heat. Layer half tortilla pieces in bottom of a 9x13 pan. Top with half of the chicken mixture; repeat layer. Cover with cheese. Bake at 350* for 30-35 minutes or until bubbly.
