1 1/2 lbs boneless, skinless chicken breasts
1 can Rotel
15 oz can black beans, drained and rinsed
8 oz frozen corn
1/4 cup chopped fresh cilantro
14.4 oz can fat free chicken broth
3 scallions, chopped
1 tsp each: garlic powder, onion powder, cumin, cayenne pepper
salt to taste
Combine everything except chicken into crock pot. Season chicken with salt and lay on top of other mixed ingredients. Cook on low for 10 hours or high for 6 hours. Half an hour before serving, remove chicken, shred and return to pot. Stir in. Adjust salt and seasoning to your taste.
Yield: 8 servings
