1 lb lean pork loin, trimmed and cut into 2" pieces
1/3 cup ketchup
2 Tbsp cider vinegar
2 Tbsp packed brown sugar
2 tsp smoked paprika
1 1/2 tsp chili powder
1 tsp ground cumin
1/2 tsp garlic powder
1/4 tsp salt
Combine all ingredients in a medium saucepan over medium-high heat. Bring to a simmer. Reduce the heat to medium-low and cover. Gently simmer, stirring occasionally, until very tender, about 1 hour. Transfer the pork and sauce to a bowl. Shred with 2 forks. Serve with a whole wheat hamburger bun (not included in nutritional info).
