2/3 cup vegetable oil
1/3 cup lemon juice
1/4 cup sugar
2 tsp chopped green onions
3/4 tsp salt
1 tsp poppy seeds
8 cups torn mixed salad greens
1 medium red apple, chopped
1 cup chopped pecans (toasted)
1 cup (4 ounces) shredded Swiss cheese
1/4 cup dried cranberries
In a jar with a tight-fitting lid, combine the first six ingredients; shake well.
In a large bowl, combine the remaining ingredients. Drizzle with dressing and toss to coat. Serve immediately.
Makes 16 servings.
